I decided to name my post BANANA TEASER!!! coz I just really wanna tickle ya’ll taste bud , as what andrew did to me yesterday. He just gave me a small portion which really makes me want to have and more 🙂

As I come home Andrew had his cooking mood going on,  its good and bad at the same time, I am happy coz I get to eat a good dessert but its mean I gotta wash a good deal of equipment ( he does help a bit tho) and towel… HE IS VERY GENEROUS when it come to using a towel…. easy!!!

Its a banana bread with salted peanut brittle, vanilla mascarpone and caramel crumble … what i like is the different texture and flavour that compile to a delicious dessert. its salty, creamy,sweet and crunchy !!! Yummy!!


4 large ripe banana

2 cup of flour

1 tsp of baking soda

1tsp of baking powder

125 gr of butter

125 gr of brown sugar

250 gr of caster sugar

2 eggs

1 tsp of vanilla

2 tbspn of sour cream.

This banana bread recipe is pretty straight forward

Pre-heat the oven to 170 degree

mix all the dry ingredient together  (set aside), meanwhile beat the butter and sugar ( brown and caster) together until smooth.

than add the egg one at the time till it combined follow by vanilla and sour cream.

pour all the dry ingredient into the mixture and then banana.


2 cup of sugar

2 tbspn of corn syrup

100 gr of peanut

this a dry method( no water involved), I find this much easier.

you gotta have a clean pan, mix your corn syrup with sugar till almost combined than turn on the heat , make sure you have the brush and water on the side to brush off the caramel from the side of the pan. REMEMBER NOT TO STIR wit spoon cause it will crystallised, just swirl the pan around.

when you get to auburn colour take off the pan from the heat than pour it into the peanut.

let it cool down, mash it and its ready.


100 gr of dice cold butter!!!! COLD

100 gr of brown sugar

100 gr of flour

2 tsp of cinnamon

in the robo coupe mix all the dry ingredient, follow by the dice COLD butter. mix till sand texture take it off!!!

in this you can add raisin, nuts or any spices than fancy you.

lay the mixture in the tray

bake it in the oven at 180 till it dry, any left over can be kept in the freezer.

you don’t have to get all this fancy with the plating, cause myself rarely can be bother to do it. you just cut the banana bread sprinkle the crumble and salted peanut to top it of a dollop of vanilla mascarpone . happy day!!!!
